Spicy Tomatillo Salsa Verde

I love the method of Blender Salsa Verde - So easy to make and so fast and so good with fresh ingredients. Awesome with your favorite tortilla chips and a margarita!

  •     1lb tomatillo, cut into quarter seeds and all
  • 2 jalopeno peppers - seeds and all
  • 1onion, rough chopped
  • 3peeled cloves of garlic
  • 1 -2chipotle peppers in adobo sauce 
  • Juice from 1 lime
  • 11 cup fresh cilantro or 1 cup fresh parsley or 1 cup fresh basil
  • Salt and Pepper to taste
Put all in Blender and Blend until smooth! Thats it

What to Do with all that extra zucchini~ Make Zucchini Salsa



Roasted Zucchini Salsa


ingredients
  • 1 medium zucchini, halved lengthwise
  • 1 handful cilantro, coarsely chopped
  • 1 jalapeno, coarsely chopped
  • 2 cloves garlic
  • 1/4 cup olive oil
  • 1/2 lime, juice
  • salt and pepper to taste
directions
  1. Brush the zucchini with oil, place it on a baking sheet with the cut side up and roast on the top shelf in a preheated 450 degree oven until tender, about 45 minutes.
  2. Puree everything in a food processor.
  3. Chill and Serve with your favorite Chips or Veggies..

Caramel Apple Dip

Caramel Apple Dip



8 ounce Cream Cheese (Softened)
1/2 cup Brown Sugar
1 tsp vanilla
dash of salt
1 cup English Toffee Bits
4 sliced Apples
2 Tablespoons Caramel Sauce Topping

Cream together Cream Cheese and brown sugar, vanilla and salt. Spread in a container or on a plate. Drizzle with Caramel. Top with Toffee bits. Serve with Apple Slices.

Making sushi at home

This was so fun to try.

1 1/4 pounds of sushi rice (23/4 cups)
3 cups water
1/2 cup Mirin, plus additional for moistening nori
5 sheets nori (1 pkg)
4 tsp wasabi powder mixed with 2 tsp water to make a paste
1/2 cup red onion small diced
1 carrot, julienned
1 scallion, julienned - green part only
1 hothouse cucumber, seeded and julienned
1 10-ounce jar pickled ginger
we also made a few rolls with Cream cheese and smoked salmon,
Shushi dipping sauce ( recipe follows)


Place rice in a strainer and rinse under cold water until fairly clear, about 5 minutes. Shake out excess water and let rice dry in strainer about 15 minutes.

Put rice in a pot with exactly 3 cups of water and cook covered on high heat until it starts to foam, about 5 minutes. Reduce the heat to low and cook until tender, about 15 minutes. Turn heat off and sprinkle with 1/4 cup mirin. Replace lid and allow the rice to steam for 15 minutes. Place in a bowl and cool to room temperature.

To prepare Sushi, place a bamboo sushi roller flat on a table with the bamboo reeds horizontal to you. Sprinkle lightly with water. place one nori sheet on top, smooth side down, and moisten lightly with mirin. With damp hands, press 1 1/4 cup rice flat on top of nori, leaving 1 1/2 inch edges on the top and bottom, but pressing all the way to the sides. Make sure the rice is pressed even and smooth.

Spread 1/4 teaspoon wasabi paste in a horizontal stripe along the lower edge of the rice. Over the wasabi, lightly sprinkle the onions in a horizontal stripe. Place strips of carrots in a horizontal stripe, on top of wasabi and onions, and follow by piling the red and yellow peppers, scallions, and cucumbers on top, making straight bundles of vegetables. Place 1 layer of pickled ginger slices on top.

To roll sushi, pick up the near edge of the bamboo roller and hold it with the nori, then pull them up and over the vegetable bundle until the nori reaches the rice on the other side. Press the roller to make a round bundle. - The nori should totally enclose the rice and vegetables in a round tube, but the ends will have rice and vegetables sticking out. Repeat the process with the other ingredients.

Keep the rolls under a damp towel and refrigerate until ready to serve. To serve, slice off the ends with a very sharp knife and slice each roll into 8 equal pieces. Place on a platter and serve with more pickled ginger, wasabi, and Sushi Dipping sauce.

Sushi Dipping Sauce

1/2 tsp wasabi powder
1/4 tsp water
1/2 tsp crushed red pepper flakes
1 tsp minced pickled ginger
1 tsp minced scallion ( green part only)
1/4 cup white wine vinegar
3 T good soy sauce
1/2 tsp sesame oil

Combine wasabi powder and water to make a paste. mix in the red pepper flakes, ginger, scallions, vinegar, soy sauce, and sesame oil. Serve as a dip with the sushi.

BBQ jalapeno Poppers

18 whole Fresh Jalapenos, 2-3 Inches In Size
8 ounces Cream Cheese, softened
Shredded cheddar cheese 1/2 cup
Chopped onion 1/4 cup
18 Thin(regular)slices Bacon, Sliced In half
BBQ sauce
Toothpicks

Preparation Instructions

Combine the cream cheese, cheddar cheeses, and chopped onion.



Cut jalapenos in half, length-wise. With a spoon, remove the seeds and white membrane (the source of the heat; leave a little if you like things HOT).

Smear softened cream cheese mixture into each jalapeno half. Wrap jalapeno with bacon pieces and Secure by sticking toothpick through the middle.

Brush with BBQ sauce.



Bake on a pan with a rack in a 275 degree oven for 60 degrees. These are best when
the jalapeno still has a bit of bite to it.

Serve immediately, or they’re also great at room temperature.

Pico De Gallo

yellow or red onions
Garden Tomatoes
Cilantro
Jalapenos
Lime
Salt

1. Dice up the onions.
2. Next, dice up an equal amount of tomatoes equal to the quantity to the onions
3. And grab a bunch of cilantro equal to the quantity to the tomatoes and chop it up pretty finely.
4. Now, slice 1 or 2 jalapenos in half. Scrap out the seeds. Dice them finely.
5. Now dump the four ingredients into a bowl. Notice that there's equal quantity of onion, tomato, and cilantro. - THAT IS THE SECRET OF PERFECT PICO DE GALLO!!
6. Slice a lime in half and squeeze the juice from half of the lime into the bowl.
7. Sprinkle with salt, and stir together until combined. Adjust to taste- salt and jalapenos.

ENJOY as a relish or with tortilla chips

Pumpkin Yumkins

Yes- an interesting name - A cupcake-muffin cross, these pumpkin yumkins with orange-cream cheese icing are yummy indeed!

Pumpkin Yumkins
I adapted the recipe from The Pastry Queen and fake ginger


Makes 1 dozen

Yumkins:

1 cup white Chocolate chips
1/2 cup (1 stick) unsalted butter, at room temperature
1 cup packed dark brown sugar
1 large egg
1 (15-ounce) can pure pumpkin
1 teaspoon vanilla
1/4 tsp orange oil
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 cup chopped raisins
1/2 tsp cinnamon

Cream Cheese Frosting:

1 (8-ounce) package cream cheese, at room temperature
1 teaspoon freshly squeeze orange juice
4 cups powdered sugar
zest of 1 orange
1/4 tsp orange oil

To make the Yumkins: Preheat oven to 350F. Arrange the nuts on a baking sheet in a single layer and toast for 7 to 9 minutes, until golden brown and aromatic. Cool the nuts, and then coarsely chop.

Grease 12 standard-size muffin cups with butter or cooking spray or use cupcake liners. Using a mixer fitted with a paddle attachment, cream the butter and sugar in a large bowl on medium speed about 1 minute. Add the egg and beat on medium speed for 1 minute. Add the pumpkin and vanilla and orange oil and beat until combined. Stir in the flour, baking soda, baking powder, and salt. Stir in the white chips and raisins and cinnamon. The batter will be thick.

Spoon the batter into muffin cups just to the top. Bake about 20 minutes until the muffins are firm to the touch or a toothpick inserted into the middle comes out clean. Cool the muffins in the pan for 5 minutes, then invert them onto racks to cool for 30 minutes before frosting.

To make the frosting: Using a mixer fitted with the paddle attachment, beat the cream cheese and orange juice and orange oil on medium speed about 20 seconds. Add the powdered sugar 1/2 cup at a time, beating until incorporated after each addition. Stir in the orange zest.

Coat the tops of the cooled Yumkins with frosting. Do no wrap until the frosting has set, about 45 minutes. Well-wrapped Yumkins will keep about 3 days in the fridge.


Moroccan Vegetarian Stew
A very Healthy Vegetarian Soup with Lots of Spice:

Ingredients
1 large onion, chopped
1 Tbsp olive oil
2 tsp ground cinnamon
2 tsp ground cumin
1 tsp ground coriander
1/2 tsp cayenne pepper
1/2 tsp ground allspice
1/4 tsp salt
3 c water
1 small butternut squash, peeled and cubed
2 medium potatoes, peeled and cubed
4 medium carrots, sliced
3 plum tomatoes, chopped
2 small zucchini, cut into 1 inch pieces
15oz can garbanzo beans, rinsed and drained


Directions
1. In a Dutch oven, saute onion in oil until tender. Add spices and salt. Cook 1 minute longer.
2. Stir in the water, squash, potatoes, carrots, and tomatoes. Bring to a boil. Reduce heat, simmer, uncovered, for 15-20 minutes or until potatoes and squash are almost tender.
3. Add zucchini and chickpeas, return to a boil. Reduce heat, simmer, uncovered, for 5-8 minutes or until vegetables are tender.


Pork and Pumkin Chili

We have made much of this great chili this season- teacher dinners and for united way fundraiser- You can tone it done with the amount of chili powder and the peppers used-

Ingredients

* 3 pounds boneless pork shoulder, trimmed and cut into 1/2-inch cubes
* 1 12-ounce bottle Mexican lager
* Kosher salt
* 2 to 3 chipotle peppers in adobo sauce, finely chopped
* 3 teaspoons dried oregano, preferably Mexican
* 1 15-ounce can pure pumpkin (about 1 3/4 cups)
* 1/2 cup sour cream
* 1/4 cup vegetable oil
* 2 medium tomatoes, roughly chopped
* 1 poblano pepper, seeded and chopped
* 2 medium white onions, diced
* 1/4 cup chili powder, plus more for sprinkling
* 4 cloves garlic, finely chopped
* 1 bunch mustard greens, stems removed, leaves roughly chopped
* Lime wedges, for serving

Directions

Combine the pork, beer, 3 cups water and 2 teaspoons salt in a large pot and bring to a simmer over medium heat, skimming the foam off the surface. Add the chipotles and 1 1/2 teaspoons oregano, cover and cook about 30 minutes.

Mix 3 tablespoons pumpkin, the sour cream and salt to taste in a bowl; cover and chill.

Heat the vegetable oil in a skillet over medium heat. Add the tomatoes, poblano, onions and 2 teaspoons salt; cook until soft, 15 minutes. Add the remaining 1 1/2 teaspoons oregano, the chili powder and garlic; cook 5 minutes. Add the remaining pumpkin and cook 5 minutes.

Add the tomato mixture to the pork and simmer until the meat is tender, about 30 minutes. Add the greens and cook 10 more minutes. Season with salt. Ladle the chili into bowls; top with the pumpkin cream and more chili powder. Serve with lime wedges.



Spiced Caramel Apple Dip

Ingredients
8-ounce package cream cheese
1 cup brown sugar, packed
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 1/2 teaspoons cinnamon + pinch for topping
1/2 teaspoon ginger + pinch for topping
pinch of salt
pinch of cardamon for topping

Step by Step
1. Cream together cream cheese and sugars. Make sure sugars are well-combined.

2. Mix in spices and combine well.

3. Top with sprinkle of cinnamon, ginger, and cardamon.

Serve with apple slices.

And yes, you can go ahead and slice your apples ahead of time, too. In a medium bowl, pour in a can of ginger ale, Sprite, or 7-Up, or even pineapple juice. As you slice your apples, simply place them in the bowl and then cover and refrigerate. Right before the party, remove slices from the liquid and serve.

Quinoa Salad with Cucumber and Feta

Ingredients

* 1-½ cup Quinoa (red, Hulled Or Both)
* 3 cups Water
* 1 whole Large Cucumber, Peeled And Diced
* 1 whole Red Bell Pepper, Cored, Finely Diced
* ½ cups Finely Chopped, Fresh Dill, Cilantro, Or Parsely (or Combination Of)
* ¼ cups Green Onion- Finely Chopped
* ¼ cups Red Onion, Finely Chopped
* ¼ cups Kalamata Olives, Sliced Or Whole
* ⅔ cups Feta Cheese, Crumbled
* _____
* FOR THE DRESSING:
* ⅓ cups Olive Oil
* ¼ cups Balsamic Vinegar
* 2-½ Tablespoons Honey
* 1 Tablespoon Dijon Mustard
* ¼ teaspoons Salt
* ¼ teaspoons Freshly Ground Pepper

Preparation Instructions

Combine the dressing ingredients. Set aside.

Rinse quinoa well before cooking to remove slightly bitter coating. Place quinoa and water in a pan. Bring to a boil. Reduce heat, cover, and simmer for 15 minutes or until liquid is absorbed. Place in a large bowl and allow to cool to room temperature.

In a large bowl, combine chopped vegetables including chopped herbs of your choice. Add quinoa, olives, and cheese and gently mix.

Add dressing, gently toss again, adding more salt and pepper if needed. Cover and chill for 1 to 2 hours to allow flavors to blend.

Garnish with fresh herbs or sliced tomatoes and olives.




Herbed Ricotta Bruschettas

2 cups ricotta cheese
3 tbsp minced scallions, white and green parts (2 scallions)
2 tbsp minced fresh dill
1 tbsp minced fresh chives
Kosher salt and freshly ground black pepper
1 round sourdough bread
Good olive oil
1 whole garlic clove, cut in half

Prepare a charcoal grill with hot coals or turn a gas grill to medium-high heat.

Combine the ricotta, scallions, dill, chives, 1 teaspoon salt, and 1/2 teaspoon pepper and set aside. Cut the bread in half and cut each half into 6 thick slices to make 12 slices total.

When the grill is hot, brush the bread with olive oil and grill on each side for 1 1/2 to 2 minutes, until lightly browned. Remove from the grill and rub each slice of bread with the cut side of the garlic clove. Sprinkle with salt and pepper and spread the herbed ricotta. Serve 2 warm slices per person with a green salad on the side.


Chicken Enchiladas
So easy
Ingredients

* 3 cups chopped cooked chicken
* 2 cups (8 ounces) shredded Monterey Jack cheese with peppers
* 1/2 cup sour cream
* 1 (4.5-ounce) can chopped green chiles, drained
* 1/3 cup chopped fresh cilantro
* 8 (8-inch) flour tortillas
* Vegetable cooking spray
* 1 (8-ounce) container sour cream
* 1 (8-ounce) bottle green taco sauce
* Toppings: diced tomato, chopped avocado, chopped green onions, sliced ripe olives, chopped cilantro

Preparation

Stir together first 5 ingredients. Spoon chicken mixture evenly over each tortilla, and roll up. Arrange in a lightly greased 13- x 9-inch baking dish. Coat tortillas with vegetable cooking spray.

Bake at 350° for 35 to 40 minutes or until golden brown.

Stir together sour cream and taco sauce. Spoon over hot enchiladas, and sprinkle with toppings.

Savory Bread Stips
A great appetizer

Ingredients

* 1 package (1/4 ounces) active dry yeast
* 6-1/2 teaspoons sugar, divided
* 1/2 cup warm water (110° to 115°)
* 3 tablespoons olive oil
* 2 tablespoons dried minced onion
* 2 teaspoons dried basil
* 1 teaspoon dried oregano
* 1 teaspoon rubbed sage
* 1 teaspoon garlic powder
* 1/2 cup cold water
* 3 cups all-purpose flour
*

TOPPING:
* 1-1/2 cups chopped fully cooked ham
* 1 cup shredded Parmesan cheese
* 1/2 cup chopped ripe olives
* 1/2 cup chopped onion
* 1/2 cup minced fresh parsley
* 1/4 cup olive oil
* 2 garlic cloves, minced

Directions

* Dissolve yeast and 1/2 teaspoon sugar in warm water; set aside. In a saucepan, combine oil, onion, basil, oregano, sage and garlic powder; cook over medium heat for 1 minute. Remove from the heat; stir in cold water. In a bowl, combine flour and remaining sugar. Stir in oil and yeast mixture. Turn onto a lightly floured surface; knead for 3 minutes. Place dough on a greased 15-in. x 10-in. x 1-in. baking pan. Cover and let stand for 15 minutes. Pat dough evenly into pan. Combine topping ingredients; sprinkle over dough. Bake at 375° for 25-30 minutes or until well browned. Cut into 2-in. x 1-in. strips. Yield: about 6 dozen.




Tortilla and Black bean Pie

Serves 6

* 4 flour tortillas (10-inch)
* 1 tablespoon canola oil
* 1 large onion, diced
* 1 jalapeno chile, minced (remove seeds and ribs for less heat)
* 2 garlic cloves, minced
* 1/2 teaspoon ground cumin
* Coarse salt and ground pepper
* 2 cans (15 ounces each) black beans, drained and rinsed
* 12 ounces beer or 1 1/2 cups water
* 1 package (10 ounces) frozen corn
* 4 scallions, thinly sliced, plus more for garnish
* 2 1/2 cups shredded cheddar cheese (8 ounces)

Directions

1. Preheat oven to 400 degrees. Using a paring knife, trim tortillas to fit a 9-inch springform pan, using the bottom of the pan as a guide. Set aside.
2. Heat oil in a skillet over medium heat. Add onion, jalapeño, garlic, and cumin; season with salt and pepper. Cook, stirring occasionally, until onion is softened, 5 to 7 minutes.
3. Add beans and beer to skillet, and bring to a boil. Reduce heat to medium; simmer until liquid has almost evaporated, 8 to 10 minutes. Stir in corn and scallions, and remove from heat. Season with salt and pepper.
4. Fit a trimmed tortilla in bottom of springform pan; layer with 1/4 of the beans and 1/2 cup cheese. Repeat three times, using 1 cup cheese on top layer. Bake until hot and cheese is melted, 20 to 25 minutes. Unmold pie; sprinkle with scallions. To serve, slice into wedges.

Jerk Chicken Nachos



Here is a great summer dinner recipe. It comes from Pampered Chef.

6 cups tortilla chips- I toasted wedges of flour tortillas to use as chips.
3 cups diced chicken
2 cups shredded cheddar
2 T Jerk seasoning- divided
1 small red or yellow bell pepper diced
1 lime juiced
2 T cilantro minced
1/4 cup Sour cream

Preheat oven to 425 degrees. Arrange Tortilla chips on a large oven proof platter.

Combine chicken, cheese and 1 T jerk seasoning, mix gently. Sprinkle chicken mixture evenly over tortilla chips. Bake 5 to 7 minutes or until cheese is melted; remove from oven.

Mix remaining jerk seasoning, lime juice and the bell pepper together in a small bowl and then spoon this mixture over the nachos and sprinkle with cilantro and garnish with sour cream.

Enjoying TAPAS

I attended a great Spring Gardening Conference this weekend. One of the topics was growing TAPAS in your midwest garden. You could make any of the recipes using ingredients purchased from the grocery store. They are perfect appetizers for enjoying in the summer with Wine. I tried a two of the recipes when I got home.

"TAPAS are small, bite-size morsels of tasty food which are uniquely Spanish. Casas de picar means " little things to nibble" - These are the simplest. Pinchos are more substantial. And are usually speared with toothpicks called banderillas( resembling the darts used in bull fighting. Cazuelas are served with a sauce and are served hot. "


Sweet Mini Chilies:

You can buy the seeds to grow these sweet mini peppers in red, yellow, green and orange. Pick them when they are about 2 inches long. There are few seeds in these peppers and they are at the top of the pepper, which makes them wonderful easy appetizers. Wash well and dry the peppers, leave the stems intact. Make a small slit at the bottom end of the pepper with a sharp knife. I then stuffed MANCHEGO cheese chunks in the peppers. In a deep kettle, add about 3 T of olive oil. When the oil is hot, add the peppers all at once, coating with the olive oil. Stir with a wooden spoon for about 5 minutes. The peppers should be intact but soft. Remove from oil and drain on paper towel. Transfer to a serving platter and generously grind course salt over the peppers. Serve immediately. You may need to show your guests how to eat them. Pick them up by the stem and bite from the bottom.


Roasted Grape Tomatoes:

Preheat oven to 450 degrees. On a rimmed baking sheet, toss 2 pints or more of grape tomatoes with 4 sprigs of fresh thyme and or oregano, 2-3 T olive oil and 2-3 Garlic cloves, minced. Season with Course salt and pepper. Roast until the tomatoes are very soft. Serve with Ciabatta bread, toasted with olive oil or soft to soak up more of the tomato juices.


We enjoyed both of these recipes with red wine.

Recipes to Try

Carrot Casserole
2 quart casserole
2 lbs. of baby carrots
1 bell pepper [any color]
1 can Cream of Celery soup
1/3 cup Ranch dressing
2 Cups Shredded Mild Cheddar Cheese
Croutons - enough to make at least ½ cup after being finely mashed
**Grease casserole with margarine
**Boil baby carrots in water until tender
**Dice pepper into ¼” pieces
**Combine mashed croutons in sauce pan with enough melted margarine to evenly coat
the croutons
**Beat the Cream of Celery soup until smooth; stir in Ranch dressing until the mixture is
combined uniformly
Layer ½ of the ingredients into the casserole in the following order and then repeat:
1] Carrots
2] Diced pepper
3] Soup/dressing mixture
4] Cheddar Cheese
Finally cover with the crumbled croutons.
Bake at 350 F for 25 minutes
Optional
I usually make a ‘star’ centered on top of the croutons with 5 smaller baby carrots and 5
strips of pepper cut the same size with one pointed end. I’ve also used 2 different
colors of peppers [½ of each] and then used both colors to make the ‘star’. I add
enough Ranch dressing to fill the center of the star and finally sprinkle a little shredded
cheddar cheese over the center.




SEVEN LAYER MAGIC BARS
(Makes 24 to 36 bars)
(Prep Time 10 minutes)
½ cup (1 stick) butter or margarine
1 ½ cups graham cracker crumbs
1 (14 oz.) can Eagle Brand Sweetened Condensed Milk (NOT evaporated milk)
1 cup (6 ozs.) butterscotch flavored chips
1 cup (6 ozs.) semi-sweet chocolate chips
1 1/3 cups flaked coconut
1 cup chopped nuts
1. Preheat oven to 350o (325o for glass dish). In 13x9 inch baking pan, melt butter in
oven.
2. Sprinkle crumbs over butter; pour sweetened condensed milk evenly over crumbs.
Top with remaining ingredients in order listed; press down firmly.
3. Bake 25 minutes or until lightly browned. Cool. Chill if desired. Cut into bars.
Store covered at room temperature.
TIP – For perfectly cut cookie bars:
Line entire pan (including sides) with a sheet of aluminum foil first. When bars are
baked, cool; lift up edges of foil to remove from pan. Cut into individual squares. Lift off
of foil.


Mexican Veggie Dip

2 - 15 oz. cans black beans, rinsed and drained.
1 - 14-1/2 oz. can diced Mexican tomatoes
1 - 11 oz. can vacuum-packed corn kernels (I like to use white shoe peg corn)
1 - Bunch of green onions, chopped
Add chopped fresh cilantro. The recipe calls for 1/2 cup - I use much more than that.
3 - Tablespoons red wine vinegar
Hot pepper sauce to taste
In bowl, toss all ingredients. Cover and refrigerate several hours to blend flavors. Serve
with tortilla chips and sour cream if desired.

Taco Meatball Ring


Ingredients:

* 2 cups (8 ounces) shredded cheddar cheese, divided
* 2 tablespoons water
* 2 to 4 tablespoons taco seasoning
* 1/2 pound ground beef
* 2 tubes (8 ounces each) refrigerated crescent rolls
* 1/2 medium head iceberg lettuce, shredded
* 1 medium tomato, chopped
* 4 green onions, sliced
* 1/2 cup sliced ripe olives
* 2 jalapeno peppers, sliced
* Sour cream and salsa, optional

Directions:
In a large bowl, combine 1 cup cheese, water and taco seasoning. Crumble beef over mixture and mix well. Shape into 16 balls.
Place meatballs on a greased rack in a shallow baking pan. Bake, uncovered, at 400° for 12 minutes or until meat is no longer pink. Drain meatballs on paper towels. Reduce heat to 375°.
Arrange crescent rolls on a greased 15-in. pizza pan, forming a ring with pointed ends facing the outer edge of the pan and wide ends overlapping.
Place a meatball on each roll; fold point over meatball and tuck under wide end of roll (meatball will be visible). Repeat. Bake for 15-20 minutes or until rolls are golden brown.
Transfer to a serving platter. Fill the center of the ring with lettuce, tomato, onions, olives, jalapenos, remaining cheese, and sour cream and salsa if desired. Yield: 16 servings.

Buffalo Chicken Dip

* 2 (10 ounce) cans chunk chicken, drained
* 2 (8 ounce) packages cream cheese, softened
* 1 cup Blue Cheese dressing
* 3/4 cup pepper sauce, such as Franks® Red Hot®
* 1 cups shredded white cheese
*Salt, Pepper, and Garlic to Taste
Crumbled Blue Cheese


DIRECTIONS

1. Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and Blue Cheese dressing. Cook, stirring until well blended and warm. Mix in the shredded cheese. Add Salt, Pepper, and Garlic to taste. Transfer the mixture to a slow cooker. Sprinkle the Crumbled Blue cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers.
