Instant Pot Wild Rice Chicken Soup

Wild Rice with Chicken Soup in the Instant Pot! A great Recipe for Fall!! 

INGREDIENTS

For the Instant Pot:
  • 1 large sweet potato, peeled and cubed
  • 5 stalks celery, chopped
  • onion, chopped
  • 3 cloves garlic, minced
  • 1 cup uncooked wild rice 
  • 8 ounces fresh mushrooms, sliced
  • 4 cups vegetable or chicken broth
  • 1 teaspoon salt
  • 1 teaspoon poultry seasoning ~ I used a combination of sage and oregano and rosemary
  • 1/2 teaspoon dried thyme
For the Stovetop:
  • 6 tablespoons butter
  • 1/2 cup flour
  • 1 can of coconut milk
I added a cup of Cooked Chicken before serving

INSTRUCTIONS

  1. Instant Pot: Put all the ingredients in the first list into the instant pot.  Cook for 45 minutes (manual). Release steam using the valve on top.
  2. Stovetop: When the soup is done, melt the butter in a saucepan. Whisk in the flour. Let the mixture cook for a minute or two to remove the floury taste. Whisk the coconut milk, a little bit at a time, until you have a smooth, thickened sauce. Throw a little salt in there for good measure.
  3. Together: Mix the creamy sauce with the soup in the instant pot. Voila! Mushroom Wild Rice Soup.

Tomato Bisque Soup ~ with Coconut Cream

First Taste of Wintery Weather yesterday~ Perfect Night for Tomato Soup



Ingredients

  • 5 slices Thick Hickory Smoked Bacon- Roughly chopped
  • 1 No. 10 can of whole Tomatoes
  • ( I love the Large Can of Tomatoes from Costco) 
  • 1  onion, thinly sliced
  • 1 head of garlic~ roughly chopped
  • 2 tablespoon butter
  • 1 bay leaf
  • 1 heaping tablespoon brown sugar
  • 2 teaspoons finely chopped fresh basil
  • 2 whole cloves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 Cups Cream of Coconut 
  • ( Found at Trader Joes)
  • 2 tablespoons chopped chives




Directions

Cook Bacon in large soup pot.  Add the butter and Saute onion and Garlic  in butter and add the chopped tomatoes. Add bay leaf, sugar, cloves, salt, pepper and basil. Simmer, stirring occasionally, until tomatoes are thoroughly cooked, about 25 minutes. Smash Tomotoes with a wooden spoon until soup is desired consistency.  Add cream of coconut and heat through. Adjust seasonings to your liking.   Sprinkle with chopped chives.

Thai Coconut Soup


Tom Kha Gai {Thai Coconut Soup}

Ingredients
  • ½ tablespoon coconut oil
  • ⅛ teaspoon Thai dried chiles, finely ground*
  • ½ cup chicken stock
  • 2 cans full fat coconut milk
  • 2 inch piece of Galangal, skin on and thinly sliced (fresh Ginger will work too)*
  • 1 stalk lemon grass, sliced diagonally into 3-4 pieces and slightly bruised/flattened with a mallet or butt of a knife*
  • kaffir lime leaves*
  • 4 tablespoons fish sauce
  • 2 cups chicken breast, very thinly sliced
  • 1 cup white button mushrooms, sliced
  • 2 tablespoons lime juice
  • ½ tablespoon coconut sugar (honey will work too, but coconut sugar will taste the most authentic)
  • 8 cherry tomatoes, sliced in half
  • fresh cilantro and scallions for serving
  • *All of the starred items can be purchased dried in a jar by the brand Thai Kitchen
Instructions
  1. Melt the coconut oil in a soup or stock pot, then add the ground chiles and stir for 1-2 minutes until fragrant.
  2. Pour in the coconut milk and bring to boil. Add the chicken stock, galangal, lemon grass, kaffir leaves, fish sauce, and chicken and simmer for 10 minutes until the chicken is cooked through.
  3. Add the mushrooms, lime juice, coconut sugar, tomatoes and simmer for another 5 minutes until the vegetables are tender but not mushy.
  4. Serve with fresh cilantro and scallions.

Lasagna Soup

Cheesy Lasagna
Soup








1 pound ground beef

1 medium onion, sliced

2 large green peppers, chopped

2 cloves garlic, finely chopped

4 cups water

2 cans (14 1/2 oz each) diced tomatoes in olive oil, garlic and spices,
undrained

1 can (6 oz) tomato paste

2 cups (4 oz) uncooked mafalsa noodles (mini lasagna noodles)

1 tablespoon brown sugar

1 1/2 teaspoon Italian seasoning, crumbled

1/4 teaspoon black pepper

1 1/2 cups Italian style croutons

1 1/2 cups shredded mozzarella cheese

1 teaspoon crushed red pepper

1/2 cup dry red wine


Cook beef, onion, bell pepper and garlic in Dutch oven over medium heat
stirring occasionally until beef is brown and onion is tender.  Drain.
Stir in water, diced tomatoes and tomato paste until blended.  Stir
in remaining ingredients except croutons and cheese.  Heat to boiling and
reduce heat.  Cover and simmer about 10 minutes, stirring occasionally
until pasta is tender.



Set oven control to broil.  pour soup into ovenproof bowls.  Top each
with 1/4 cup croutons and sprinkle with cheese.  Broil soup with tops 3-4
inches from heat 1-2 minutes or until cheese is melted.




IIf you can not find mafalada noodles,  substitute cork screw or
small shells for the noodles.

Spicy Roasted Tomato Soup


Well It is May Day today but it is 33degrees and Rainy with possible Snow tonight so Soup Sounded Good! I loved the method of roasting all the vegetables in the oven- makes it so easy!

ingredients:
5 large tomatoes, cut into 3/4" slices1 onion, cut into 1/2" slices1/2 jalapeno, cut in half lengthwise, seeded2 bell peppers, seeded, cut into 4 piecesolive oil1/4 teaspoon smoked paprika 1/2 teaspoon garlic powder3/4 teaspoon salt (or to taste)freshly ground black pepper2 cups vegetable broth1/4 cup grated parmesan cheese (plus additional cheese for garnishing)- I used sharp Cheddarfew tablespoons of heavy cream or creme fraiche (optional)

directions:

1. Preheat oven to 375F. Arrange all vegetables on baking sheet. Drizzle olive oil all over. Roast for 20 minutes.
For immersion blender:
Roughly chop all vegetables. Add all vegetables, smoked paprika, garlic powder, salt, pepper, vegetable broth and grated cheese to pot large enough so that when you use your immersion blender, it doesn't splatter all over the place. Blend in pot until you get a nice puree. Bring to simmer, taste and adjust seasoning.
For Vitamix or Blendtec:
Add all ingredients to blender and set on your "Soup" setting. Taste and adjust seasoning.
For standard blender:
Add all ingredients to blender, blend until smooth puree. Taste and adjust seasoning. Pour into pot and heat to serve.
Garnish with additional parmesan cheese, a turn of the pepper mill and serve with crusty bread.

Irish Italian Beef Stew


Irish Italian Stew ( Ireland)

3 lbs. beef stew cubes- bought a chuck roast and cubed it
3 c. water
3 1/2 c. Tomato puree- (1 can cheap chunky spaghetti sauce)
1 1/2 tbsp. salt
3/4 tsp. pepper
1 bay leaf
3 lg. raw potatoes
10 peeled carrots
1 c. grated Romano cheese
1/4 c. cracker meal
1 egg
1 lb. can drained onions- ( 1 bag of frozen pearl onions)
1/4 c. water
2 tbsp. flour
Combine meat, water, puree, salt, pepper and bay leaf in large saucepan. Cover; heat to boiling. Reduce heat and simmer about 2 hours. Cut potatoes into large cubes. Cut carrots in 2 inch pieces. Add potatoes and carrots to stew. Cover; cook about 30 minutes. Combine cheese, cracker meal and eggs. Shape into 12 balls. Add cheese balls and onions to stew. Blend until thickened. Simmer 10 minutes more. Remove bay leaf. Serves 12


I made this for dinner last night- Good and Easy- I skipped the cracker ball part - maybe next time.

Menu: Soup today


Buffalo Chicken Soup
Ingredients
• A 2 ¼ - 2 ½ pound deli-roasted chicken, skinned, boned, and coarsely shredded
• 2 tablespoons butter
• 1/2 cup coarsely chopped celery
• 1/2 cup chopped onion
• Two 14-ounce cans reduced-sodium chicken broth
• 1 ½ cups milk
• 1 teaspoon bottled hot pepper sauce
• 1 ½ cups mozzarella cheese (6 oz.)
• 1 ¼ cups crumbled blue cheese (5 oz.)
• 1/2 cup shredded Parmesan cheese (2 oz.)
• 1/3 cup all-purpose flour
• Bottled hot pepper sauce (optional)

Directions 
1. In 4-quart Dutch oven melt butter over medium heat. Add celery and onion; cook and stir until onion is tender. Stir in broth, milk, and the 1 teaspoon hot pepper sauce.
2. In bowl toss together mozzarella, 1 cup of the blue cheese, Parmesan, and flour. Add gradually to soup, stirring after each addition just until melted. Stir in three-fourths of the shredded chicken; heat through. Top with remaining chicken, blue cheese, and hot sauce. Makes 6 servings.

Soup of the Day- Panera Bread Inspired Broccoli Cheese Soup





Ingredients Needed:
1 Tablespoon Butter, Melted
1/2 Medium Onion, Chopped
1/4 Cup of Flour
2 Cups of Half and Half
2 Cups of Chicken Stock
1 Pound of Fresh Broccoli
1 Cup of Carrots, Julienned
Salt and Pepper to Taste
1 Teaspoon of Garlic Powder
1/4 Teaspoon Nutmeg
8 Ounces Grated Sharp Cheddar


Sauté chopped onion in 1 tablespoon of melted butter and set aside

Using a whisk combine 1/4 cup of butter and flour over medium heat cooking for 3-5 minutes. Stir constantly and slowly add the half and half to make a roux.


Still constantly stirring, add in the chicken broth and simmer for 20 minutes.
Add in 1/2 of the broccoli {1/2 Pound - cut in pieces}, carrots, and sautéed onions.

Cook over low heat for 20-25 minutes until the veggies are tender. Add salt, pepper and garlic powder. The soup should be thickened by now.
Pour soup in batches into a blender and puree.
Return to pot over low heat and add the grated cheese, stirring until well blended. Steam the remaining 1/2 of the fresh broccoli {cut into pieces} and add to soup. Stir in nutmeg.
Top with additional grated cheese and serve...Enjoy!

Hot And Sour Soup perfect for January

Great Cold weather Healthy Soup! From the Kitchn


Hot and Sour Mushroom, Cabbage, and Rice Soup

Makes eight to ten 1-cup servings

1 tablespoon canola oil
4 ounces cremini or shiitake mushroom caps, thinly sliced
1 to 3 jalapeno peppers, finely diced
6 cloves garlic, minced
One 3-inch lump ginger, grated (or 1 tablespoon ginger puree)
1 to 3 limes, zested and juiced
8 cups broth — turkey, chicken, or vegetable
1/2 cup jasmine rice
2 tablespoons soy sauce, plus more to serve
1/2 small head green cabbage, cut in half and shaved thin
Chili garlic sauce or kimchi, to serve

Heat the oil in a large heavy pot or Dutch oven over medium-high heat. Add the mushrooms and cook for 5 minutes without stirring. Toss the mushrooms after 5 minutes and cook for an additional 5 minutes, or until well-browned. Add the diced peppers, garlic, and ginger and cook for about five minutes or until fragrant and slightly softened.

Add the lime zest and broth and bring to a simmer. Add the rice, cover, and simmer for about 20 minutes or until the rice is just barely soft. Add the shaved cabbage, lime juice, and soy sauce to taste and simmer for another few minutes or until cabbage is hot.

Serve with extra soy sauce, lime wedges, and kimchi or chili garlic sauce.

Roasted-Tomato Basil Soup

I made this Yesterday for Dinner last night. Perfect Recipe for right now. We got our first frost for the season. I harvested the remaining Basil from the garden and used up the last of the garden tomatoes from the Local Farmer's Market. This recipe calls for tons of tomatoes and 4 packed cups of Basil!

Roasted Tomato Basil Soup

Ingredients
3 pounds ripe plum tomatoes, cut in half lengthwise
1/4 cup plus 2 tablespoons good olive oil
1 tablespoon kosher salt
1 1/2 teaspoons freshly ground black pepper
2 cups chopped yellow onions (2 onions)
6 garlic cloves, minced
2 tablespoons unsalted butter
1/4 teaspoon crushed red pepper flakes
1 (28-ounce) canned plum tomatoes, with their juice
4 cups fresh basil leaves, packed
1 teaspoon fresh thyme leaves
1 quart chicken stock or water
Directions
Preheat the oven to 400 degrees F. Toss together the tomatoes, 1/4 cup olive oil, salt, and pepper. Spread the tomatoes in 1 layer on a baking sheet and roast for 45 minutes.
In an 8-quart stockpot over medium heat, saute the onions and garlic with 2 tablespoons of olive oil, the butter, and red pepper flakes for 10 minutes, until the onions start to brown. Add the canned tomatoes, basil, thyme, and chicken stock. Add the oven-roasted tomatoes, including the liquid on the baking sheet. Bring to a boil and simmer uncovered for 40 minutes. Pass through a food mill fitted with the coarsest blade. Taste for seasonings. Serve hot or cold.

Tomato Basil Soup and a Milk glass MENU plate

I attached some vinyl letters and shapes to a vintage milk glass platter to create a 'dry erase' board. This would also work to make a daily to do list.



Tomato Basil Soup

4 cups tomatoes peeled and chopped
4 cups tomato juice
12 to 14 fresh basil leaves
1 cup heavy whipping cream
1/2 cup butter
Salt to taste
Pepper to taste
Fresh basil leaves

Combine tomatoes and tomato juice in saucepan; simmer over med low heat. 30 minutes.
Cool slightly, place in blender or food processor with basil leaves and purée in batches.
Return to saucepan and add whipping cream and butter. Stir over low heat until cream and butter are incorporated.
Season with salt and pepper.
Garnish with basil leaves, if desired.

Serve with crusty bread.

Hot and Sour Soup

There many different recipes or variations of hot and sour soup. Two important things are how sour (rice vinegar) and how hot (chili oil, chili paste, red pepper flakes, or some combination of the three). Hot and sour soup is an easy, quick, tasty and healthy soup that you can make to your liking.



Here's my favorite variation:
8 ounces thinly sliced mushrooms
1/4 pound thinly sliced pork tenderloin
1 T minced fresh garlic
2 T vegetable oil
5 cups chicken broth
2 T cornstarch
4 T rice vinegar
15 ounces tofu, cubes
1 tsp salt
1 tsp soy sauce
1/8 tsp ground red pepper
Pinch of red pepper flakes
1 T minced fresh Ginger
1 can bamboo shoots
1egg, beaten
2 T sesame oil
3 green onions, sliced



Heat vegetable oil and cook pork and garlic in soup pot for 5 minutes; add the mushrooms and continue to sauté until mushrooms are tender. Add broth and bring to a boil and cook over low heat for 10 minutes. Mix together the cornstarch and the rice vinegar, and then stir into the soup until thickened. Add the tofu, salt, soy sauce and red pepper, Ginger, and bamboo shoots. Stir in the egg, then the sesame oil and green onion. Taste for seasonings; the soup should be a little tart and spicy. Adjust to your taste.



Play with hot and sour combination to get the right taste for you. You can add more vinegar or more red pepper.

Steak Soup

2 pounds cubes beef or ground beef
1 cup onion, chopped
5 cups water
Jar of spaghetti sauce, 12 ounces
1 cup celery, chopped
1 cup carrots, chopped
1 can corn, drained
2 tsp beef bouillon
Salt and pepper to taste
Steak seasoning to taste
1 cup macaroni

Brown beef with onion; drain
Add water
Add spaghetti sauce, celery, carrots, corn, green beans, beef bouillon, salt and pepper. Simmer until vegetables are tender.
Add macaroni and cook until pasta is done.

Alphabet vegetable soup

From the quick-fix vegetarian cookbook
ALPHABET VEGETABLE SOUP
ingredients:
1 tbs extra virgin olive oil
1 large clove garlic, minced
1/2 medium red onion, chopped
2 carrots, peeled and chopped
2 stalks celery, sliced
5 cups vegetable broth
1/3 cup frozen peas
1/3 cup frozen corn
1 (15 oz) can chick peas
1/2 cup vegetable shaped pasta
salt and pepper to taste

directions:
heat oil in large saucepan over medium heat.
add garlic and onions and saute for 3-5 minutes
add celery and carrots and saute for another 3-5 minutes.
stir in broth, peas, corn, and chickpeas.
turn up heat to high and bring to a boil.
add pasta and reduce heat back to medium.
simmer until vegetables are tender and pasta is al dente, about 10-15 minutes.
salt and pepper to taste.
serve hot!

HEARTY VEGETABLE SOUP with BASIL MEATBALLS


Hearty Vegetable Soup

I have been busy cleaning out my stashes of old magazines and books - We tried this great soup recipe from the Feb 2010 issue of Midwest living.

Prep: 35 minutes
Cook: 40 minutes

Ingredients

* 2 Tbsp. butter
* 2 Tbsp. olive oil
* 2 large onions, chopped (2 cups)
* 2 stalks celery, chopped (1 cup)
* 2 medium carrots, chopped (1 cup)
* 2 cloves garlic, minced
* 4 14-oz. cans beef broth
* 2 large red potatoes, peeled and cubed (2-1/4 cups)
* 1 10-oz. can tomato purée
* Basil Meatballs (recipe follows)
* Salt (optional)
* Red bottled hot pepper sauce (optional)
* 1/2 cup shredded fresh basil

Directions

1. In a 5-quart Dutch oven, heat butter and oil over medium heat. Add onions, celery, carrots and garlic. Cook over medium heat for 10 minutes, stirring often.

2. Stir in the broth and potatoes. Bring to boiling; reduce heat. Simmer, covered, for 20 minutes. Add tomato puree and Basil Meatballs* to the soup, a few at a time and cook, covered, 10 to 15 minutes more or until no pink remains in meatballs. Season to taste with salt and hot pepper sauce, if you like. Skim fat and garnish each serving with some of the fresh basil. Makes 8 servings.

3. Basil Meatballs: In a large bowl, combine 1 lightly beaten egg, 1/2 cup soft bread crumbs, 2 tablespoons shredded fresh basil, 2 tablespoons snipped fresh Italian (flat-leaf) parsley, 1 teaspoon kosher salt and 1/2 teaspoon freshly ground black pepper. Add 1 pound lean ground beef. Using two forks, lightly toss together all ingredients. Shape into tiny meatballs. (If you like, use a melon baller or small cookie scoop to shape the meatballs.) Makes 42, 3/4-inch meatballs.

4. *Baking Meatballs: For a browner meatball, arrange meatballs in a 15x10x1-inch baking pan. Bake, uncovered, in a 350 degree F. oven for 12 to 15 minutes or until no pink remains. Add to soup along with tomato puree and heat through.

Pumpkin Yumkins

Yes- an interesting name - A cupcake-muffin cross, these pumpkin yumkins with orange-cream cheese icing are yummy indeed!

Pumpkin Yumkins
I adapted the recipe from The Pastry Queen and fake ginger


Makes 1 dozen

Yumkins:

1 cup white Chocolate chips
1/2 cup (1 stick) unsalted butter, at room temperature
1 cup packed dark brown sugar
1 large egg
1 (15-ounce) can pure pumpkin
1 teaspoon vanilla
1/4 tsp orange oil
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 cup chopped raisins
1/2 tsp cinnamon

Cream Cheese Frosting:

1 (8-ounce) package cream cheese, at room temperature
1 teaspoon freshly squeeze orange juice
4 cups powdered sugar
zest of 1 orange
1/4 tsp orange oil

To make the Yumkins: Preheat oven to 350F. Arrange the nuts on a baking sheet in a single layer and toast for 7 to 9 minutes, until golden brown and aromatic. Cool the nuts, and then coarsely chop.

Grease 12 standard-size muffin cups with butter or cooking spray or use cupcake liners. Using a mixer fitted with a paddle attachment, cream the butter and sugar in a large bowl on medium speed about 1 minute. Add the egg and beat on medium speed for 1 minute. Add the pumpkin and vanilla and orange oil and beat until combined. Stir in the flour, baking soda, baking powder, and salt. Stir in the white chips and raisins and cinnamon. The batter will be thick.

Spoon the batter into muffin cups just to the top. Bake about 20 minutes until the muffins are firm to the touch or a toothpick inserted into the middle comes out clean. Cool the muffins in the pan for 5 minutes, then invert them onto racks to cool for 30 minutes before frosting.

To make the frosting: Using a mixer fitted with the paddle attachment, beat the cream cheese and orange juice and orange oil on medium speed about 20 seconds. Add the powdered sugar 1/2 cup at a time, beating until incorporated after each addition. Stir in the orange zest.

Coat the tops of the cooled Yumkins with frosting. Do no wrap until the frosting has set, about 45 minutes. Well-wrapped Yumkins will keep about 3 days in the fridge.


Moroccan Vegetarian Stew
A very Healthy Vegetarian Soup with Lots of Spice:

Ingredients
1 large onion, chopped
1 Tbsp olive oil
2 tsp ground cinnamon
2 tsp ground cumin
1 tsp ground coriander
1/2 tsp cayenne pepper
1/2 tsp ground allspice
1/4 tsp salt
3 c water
1 small butternut squash, peeled and cubed
2 medium potatoes, peeled and cubed
4 medium carrots, sliced
3 plum tomatoes, chopped
2 small zucchini, cut into 1 inch pieces
15oz can garbanzo beans, rinsed and drained


Directions
1. In a Dutch oven, saute onion in oil until tender. Add spices and salt. Cook 1 minute longer.
2. Stir in the water, squash, potatoes, carrots, and tomatoes. Bring to a boil. Reduce heat, simmer, uncovered, for 15-20 minutes or until potatoes and squash are almost tender.
3. Add zucchini and chickpeas, return to a boil. Reduce heat, simmer, uncovered, for 5-8 minutes or until vegetables are tender.


Pork and Pumkin Chili

We have made much of this great chili this season- teacher dinners and for united way fundraiser- You can tone it done with the amount of chili powder and the peppers used-

Ingredients

* 3 pounds boneless pork shoulder, trimmed and cut into 1/2-inch cubes
* 1 12-ounce bottle Mexican lager
* Kosher salt
* 2 to 3 chipotle peppers in adobo sauce, finely chopped
* 3 teaspoons dried oregano, preferably Mexican
* 1 15-ounce can pure pumpkin (about 1 3/4 cups)
* 1/2 cup sour cream
* 1/4 cup vegetable oil
* 2 medium tomatoes, roughly chopped
* 1 poblano pepper, seeded and chopped
* 2 medium white onions, diced
* 1/4 cup chili powder, plus more for sprinkling
* 4 cloves garlic, finely chopped
* 1 bunch mustard greens, stems removed, leaves roughly chopped
* Lime wedges, for serving

Directions

Combine the pork, beer, 3 cups water and 2 teaspoons salt in a large pot and bring to a simmer over medium heat, skimming the foam off the surface. Add the chipotles and 1 1/2 teaspoons oregano, cover and cook about 30 minutes.

Mix 3 tablespoons pumpkin, the sour cream and salt to taste in a bowl; cover and chill.

Heat the vegetable oil in a skillet over medium heat. Add the tomatoes, poblano, onions and 2 teaspoons salt; cook until soft, 15 minutes. Add the remaining 1 1/2 teaspoons oregano, the chili powder and garlic; cook 5 minutes. Add the remaining pumpkin and cook 5 minutes.

Add the tomato mixture to the pork and simmer until the meat is tender, about 30 minutes. Add the greens and cook 10 more minutes. Season with salt. Ladle the chili into bowls; top with the pumpkin cream and more chili powder. Serve with lime wedges.



Spiced Caramel Apple Dip

Ingredients
8-ounce package cream cheese
1 cup brown sugar, packed
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 1/2 teaspoons cinnamon + pinch for topping
1/2 teaspoon ginger + pinch for topping
pinch of salt
pinch of cardamon for topping

Step by Step
1. Cream together cream cheese and sugars. Make sure sugars are well-combined.

2. Mix in spices and combine well.

3. Top with sprinkle of cinnamon, ginger, and cardamon.

Serve with apple slices.

And yes, you can go ahead and slice your apples ahead of time, too. In a medium bowl, pour in a can of ginger ale, Sprite, or 7-Up, or even pineapple juice. As you slice your apples, simply place them in the bowl and then cover and refrigerate. Right before the party, remove slices from the liquid and serve.

Quinoa Salad with Cucumber and Feta

Ingredients

* 1-½ cup Quinoa (red, Hulled Or Both)
* 3 cups Water
* 1 whole Large Cucumber, Peeled And Diced
* 1 whole Red Bell Pepper, Cored, Finely Diced
* ½ cups Finely Chopped, Fresh Dill, Cilantro, Or Parsely (or Combination Of)
* ¼ cups Green Onion- Finely Chopped
* ¼ cups Red Onion, Finely Chopped
* ¼ cups Kalamata Olives, Sliced Or Whole
* ⅔ cups Feta Cheese, Crumbled

* FOR THE DRESSING:
* ⅓ cups Olive Oil
* ¼ cups Balsamic Vinegar
* 2-½ Tablespoons Honey
* 1 Tablespoon Dijon Mustard
* ¼ teaspoons Salt
* ¼ teaspoons Freshly Ground Pepper

Preparation Instructions

Combine the dressing ingredients. Set aside.

Rinse quinoa well before cooking to remove slightly bitter coating. Place quinoa and water in a pan. Bring to a boil. Reduce heat, cover, and simmer for 15 minutes or until liquid is absorbed. Place in a large bowl and allow to cool to room temperature.

In a large bowl, combine chopped vegetables including chopped herbs of your choice. Add quinoa, olives, and cheese and gently mix.

Add dressing, gently toss again, adding more salt and pepper if needed. Cover and chill for 1 to 2 hours to allow flavors to blend.

Garnish with fresh herbs or sliced tomatoes and olives.




Herbed Ricotta Bruschettas

2 cups ricotta cheese
3 tbsp minced scallions, white and green parts (2 scallions)
2 tbsp minced fresh dill
1 tbsp minced fresh chives
Kosher salt and freshly ground black pepper
1 round sourdough bread
Good olive oil
1 whole garlic clove, cut in half

Prepare a charcoal grill with hot coals or turn a gas grill to medium-high heat.

Combine the ricotta, scallions, dill, chives, 1 teaspoon salt, and 1/2 teaspoon pepper and set aside. Cut the bread in half and cut each half into 6 thick slices to make 12 slices total.

When the grill is hot, brush the bread with olive oil and grill on each side for 1 1/2 to 2 minutes, until lightly browned. Remove from the grill and rub each slice of bread with the cut side of the garlic clove. Sprinkle with salt and pepper and spread the herbed ricotta. Serve 2 warm slices per person with a green salad on the side.


Chicken Enchiladas

Ingredients

* 3 cups chopped cooked chicken
* 2 cups (8 ounces) shredded Monterey Jack cheese with peppers
* 1/2 cup sour cream
* 1 (4.5-ounce) can chopped green chiles, drained
* 1/3 cup chopped fresh cilantro
* 8 (8-inch) flour tortillas
* Vegetable cooking spray
* 1 (8-ounce) container sour cream
* 1 (8-ounce) bottle green taco sauce
* Toppings: diced tomato, chopped avocado, chopped green onions, sliced ripe olives, chopped cilantro

Preparation

Stir together first 5 ingredients. Spoon chicken mixture evenly over each tortilla, and roll up. Arrange in a lightly greased 13- x 9-inch baking dish. Coat tortillas with vegetable cooking spray.

Bake at 350° for 35 to 40 minutes or until golden brown.

Stir together sour cream and taco sauce. Spoon over hot enchiladas, and sprinkle with toppings.

Savory Bread Stips

Ingredients

* 1 package (1/4 ounces) active dry yeast
* 6-1/2 teaspoons sugar, divided
* 1/2 cup warm water (110° to 115°)
* 3 tablespoons olive oil
* 2 tablespoons dried minced onion
* 2 teaspoons dried basil
* 1 teaspoon dried oregano
* 1 teaspoon rubbed sage
* 1 teaspoon garlic powder
* 1/2 cup cold water
* 3 cups all-purpose flour

TOPPING:
* 1-1/2 cups chopped fully cooked ham
* 1 cup shredded Parmesan cheese
* 1/2 cup chopped ripe olives
* 1/2 cup chopped onion
* 1/2 cup minced fresh parsley
* 1/4 cup olive oil
* 2 garlic cloves, minced

Directions

* Dissolve yeast and 1/2 teaspoon sugar in warm water; set aside. In a saucepan, combine oil, onion, basil, oregano, sage and garlic powder; cook over medium heat for 1 minute. Remove from the heat; stir in cold water. In a bowl, combine flour and remaining sugar. Stir in oil and yeast mixture. Turn onto a lightly floured surface; knead for 3 minutes. Place dough on a greased 15-in. x 10-in. x 1-in. baking pan. Cover and let stand for 15 minutes. Pat dough evenly into pan. Combine topping ingredients; sprinkle over dough. Bake at 375° for 25-30 minutes or until well browned. Cut into 2-in. x 1-in. strips. Yield: about 6 dozen.




Tortilla and Black bean Pie

Serves 6

* 4 flour tortillas (10-inch)
* 1 tablespoon canola oil
* 1 large onion, diced
* 1 jalapeno chile, minced (remove seeds and ribs for less heat)
* 2 garlic cloves, minced
* 1/2 teaspoon ground cumin
* Coarse salt and ground pepper
* 2 cans (15 ounces each) black beans, drained and rinsed
* 12 ounces beer or 1 1/2 cups water
* 1 package (10 ounces) frozen corn
* 4 scallions, thinly sliced, plus more for garnish
* 2 1/2 cups shredded cheddar cheese (8 ounces)

Directions

1. Preheat oven to 400 degrees. Using a paring knife, trim tortillas to fit a 9-inch springform pan, using the bottom of the pan as a guide. Set aside.
2. Heat oil in a skillet over medium heat. Add onion, jalapeño, garlic, and cumin; season with salt and pepper. Cook, stirring occasionally, until onion is softened, 5 to 7 minutes.
3. Add beans and beer to skillet, and bring to a boil. Reduce heat to medium; simmer until liquid has almost evaporated, 8 to 10 minutes. Stir in corn and scallions, and remove from heat. Season with salt and pepper.
4. Fit a trimmed tortilla in bottom of springform pan; layer with 1/4 of the beans and 1/2 cup cheese. Repeat three times, using 1 cup cheese on top layer. Bake until hot and cheese is melted, 20 to 25 minutes. Unmold pie; sprinkle with scallions. To serve, slice into wedges.

Salmon Bisque

1/2 pound fresh salmon- (I used frozen that I roasted in a 375 degree oven until cooked)
4 Tablespoons butter
1/4 cup minced green onions
1 clove garlic, minced- (I used 4 cloves)
1/4 cup all-purpose flour
2 cups milk
3 cups half and half
1/2 cup tomato puree- (I used a 14 ounce can stewed tomatoes chopped fine)
2 Tablespoons dry sherry- (I used dry white wine)
1 tsp salt
1 Tablespoon minced fresh dill
1/4 tsp ground pepper

Garnish: Fresh dill

6-8 servings
Poach Salmon. Cool, Flake and set aside. In a large saucepan, melt butter, stir in green onions and garlic, and saute until onions are transparent. Blend in flour. Cook, stirring constantly, for 5 miutes. Slowly whisk in milk and half and half, stirring until thickened. Add flaked salmon, tomato puree, sherry, salt, dill weed and pepper. Simmer covered for 15 minutes. To serve, garnish with fresh dill.

Baking: Salted Thyme Flatbread


SALTED THYME FLATBREAD


A great easy yeast bread to have with soup- We had it with Hearty Meatless Minestrone-

BREAD:
1¼ cups warm water (110 to 115°F.)
1½ tsp granulated sugar
1½ tsp active dry yeast
1½ tsp salt
3½ cups all-purpose flour

TOPPING:
2 Tbs olive oil
1 Tbs or less
coarse Sea salt
1 Tbs fresh chopped thyme
Rosemary and red pepper flakes

1. Place water into large bowl. Sprinkle with sugar and yeast. Let stand 5 minutes or until yeast is dissolved. Stir in salt. Gradually add flour, stirring until dough forms.

2. On a lightly floured surface, knead dough 10 to 12 minutes or until smooth and elastic. Place dough in large oiled bowl, cover; let rise in warm place until doubled in size; about 45 minutes to 1 hour.

3. Place oven rack in lowest rack position; heat oven to 450°F. Grease a 15×10x1-inch jelly roll pan.

4. Gently punch down dough to deflate. Place in pan; using palm of hand press dough to cover bottom of the pan. Cover; let rise about 20 minutes or until risen by half. Brush dough with oil; sprinkle generously with coarse salt, Rosemary, and red pepper flakes.

5. Bake 12 to 15 minutes or until light golden brown. Remove from oven and sprinkle with thyme.

Servings: 8

Cooking Tips
*If using a KA mixer with a dough hook, simply dump all of the bread ingredients into the mixer and let it do all of the mixing and kneading.
**If you’re using a bread machine, layer the ingredients in the bread pan according to the manufacturer’s instructions and let it do the kneading and the first rise. Then take it out of the machine and prep it for the 2nd rise.

Hearty Meatless Minestrone



Ingredients

* 1 large onion, chopped
* 3 tablespoons olive oil
* 2 celery ribs, chopped
* 2 medium carrots, chopped
* 1 cup chopped cabbage
* 1 medium red pepper, chopped
* 1 medium zucchini, chopped
* 6 garlic cloves, minced
* 3-1/2 cups water
* 1 cans (14-1/2 ounces each) diced tomatoes, undrained
* 1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
* 1 jar (28 ounces) tomato sauce
* 3 tablespoons dried parsley flakes
* 2 teaspoons dried basil
* 2 teaspoons dried oregano
* 1 teaspoon salt
* 1/2 teaspoon pepper
* 1/4 teaspoon cayenne pepper
* 1/2 cup small pasta shells or macaroni
* Fresh basil leaves and shaved Parmesan cheese, optional

Directions

* In a Dutch oven, saute onion in oil for 2 minutes. Add the celery, carrots, cabbage, green pepper, zucchini and garlic; saute 3 minutes longer. Stir in the water, tomatoes, beans,tomato sauce and seasonings. Bring to a boil. Reduce heat; cover and simmer for 15 minutes.
* Stir in pasta; cook 12-15 minutes longer or until tender. Garnish each serving with basil and cheese if desired. Yield: 8 servings (3 quarts).

Soup For Dinner

White Chicken Chili


2 lbs. Chicken breast
3 cans great white northern beans
2 cans chicken broth
1 tbs. Oil
1 med. Onion
2 tsp. Minced garlic
2 tsp. Garlic powder
1 can Rotel’s tomatoes & green chilies
2 tsp ground cumin
1 tsp. Oregano
½ Cayenne pepper
½ tsp. Salt
4 cups grated Monterey jack cheese (1 8 oz. Brick)
16 oz. Sour cream

Boil and shred chicken breast

Sauté onion & minced garlic with oil in skillet.
Add Rotel and spices; let simmer a few minutes.

Place all ingredients into a large pot.
Cook on medium heat for 1 hour.

Just before serving add sour cream and cheese.
Warm on med. To low heat until heated through.
