Crepes with shrimp, tomatoes, and chives

I love making crepes.. They really are easy- I use an electric crepe maker; but if you do not have one they are very similar to making pancakes in a frying pan. This is a great crepe fillings recipe to make for a quick dinner. This simple sauté of shrimp, tomato, and chives is also delicious served over rice.

Crepes with Shrimp, Tomato, and Chives


2 tablespoons olive oil
1 medium onion, chopped
1 pound medium shrimp, peeled and deveined
1¼ pound tomatoes, chopped
¼ cup white wine
½ teaspoon kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons chopped chives
8-10 crepes


In a large skillet, heat oil over medium-high heat until hot but not smoking. Add onions and cook for 2 to 3 minutes, stirring occasionally, until they start to soften. Add shrimp, tomatoes, wine, salt, and pepper. Simmer and stir until shrimp turns pink, 5 to 7 minutes. Taste and add additional salt or pepper if needed. Remove from heat and stir in chives. Place some shrimp mixture into each crepe, roll up, and serve.

Banana~fana~fo cake

Delicious Cake with a wonderful orange-cream cheese icing!

Cake
1 cup margarine or butter, softened
2 cups sugar
3/4 cup milk
2 eggs, slightly beaten
2 teaspoons baking soda
3 cups flour
4 overripe bananas, peeled and mashed

Orange Cream Cheese Icing
8 ounces cream cheese, softened
1/2 cup butter, softened
1 1/2 lbs powdered sugar
1 navel orange, zest of
1 navel orange, juice of

Directions:
Prep Time: 25 mins
Total Time: 48 mins
1 Cake:.
2 Preheat oven to 350*. Cream margarine and sugar together until light and fluffy. Add 2 tablespoons milk; add eggs, dry ingredients, and remaining milk alternately. Beat thoroughly.
3 Fold in bananas and pour into three 8-inch greased cake pans. Bake 23-28 mintues. Cool completely before frosting.
4 Frosting:.
5 Blend cream cheese and butter together. Add orange zest and juice and mix thoroughly.
6 Gradually add powdered sugar, blending until smooth.


Ice cake as desired.

GARDENS.....
























Gardens are precious things to be cherished in our minds and hearts, for they are like a magic carpet that whisks us away from uncertainty into an enchanted realm where for a time we can banish the turmoil of the present day. Outside there may be tumult, but within there is peace and quiet from which we may gather strength and fortitude.

We are hoping for better things beyond the horizon and our part is to meet today's demands for changes and readjustments; this requires faith and courage. May we be granted the ability to help in banishing hatred from this earth and in its stead have mercy and goodwill throughout the world.
