HOMEMADE TACOS
My Taco Seasoning
1. Combine the Following ingredients.
1 T flour
1 T corn starch
1 T dried minced onion
1 tsp beef bouillon granules
1 tsp garlic powder
1 tsp cumin
1 tsp paprika
2 T chili powder
1/2 tsp onion powder
1 tsp salt
1/4 tsp cayenne
1 tsp coriander
1/2 tsp dried oregano
1/2 tsp sugar
Combine and store in air-tight container
To make taco meat, brown 1 pound ground beef in a skillet over medium-high heat. Add 1 chopped onion and 4 cloves minced garlic to ground beef and cook until done.
Add seasoning mix and 1 cup water. Bring to a boil; reduce heat to a medium-low. Simmer, uncovered, for 10 minutes, stirring occationally.

HOMEMADE TACO SAUCE
MAKES 1 CUP
"I never planned to make my own taco sauce but I was making tacos and realized that I didn't have any sauce. I figured it couldn't be very difficult to duplicate and it wasn't. I probably will never again buy a commercial sauce. The amount of seasonings you use are totally to taste. Start with less and add more. Keep in mind that, unlike commercial products with preservatives, this will only last in the refrigerator for about 5 days, so don't make more than you need unless you freeze it. The amount given here is appropriate for most taco meals or dips. "
INGREDIENTS
1 can (8 ounces) unseasoned tomato sauce, preferably no-salt
1 teaspoon ground cumin
1/4 teaspoon garlic powder
2 teaspoons dried minced onion
1/2 teaspoon dried oregano
1/2 teaspoon Worcestershire sauce
Cayenne pepper or hot sauce to taste
Salt and pepper to taste
Combine all the ingredients in a small bowl. Let set for at least 30 minutes to allow flavors to blend. Taste for seasoning and adjust as needed. Serve with Beef Tacos or in Mexican-style dips and salads.
