These are the Examples of coasters that I made the other day. We used this as a craft project with over 40 4-h kids this afternoon. It was fun to see all the creations.

Chocolate-Sour-Cream Raisin Cake

From an old Church Cookbook


1 pkg chocolate cake mix

3/4 cup brown sugar
3/4 cup granulated sugar
3 tablespoons cornstarch
1 1/2 cups sour cream
2 eggs
1 cup raisins
1/2 cup chopped nuts
1 tsp vanilla

Bake cake mix as directed on box and bake in a rectangular jellyroll pan and cool. Bake at 350 degrees.

Mix sugars and cornstarch in a 2 quart saucepan; stir in sour cream and eggs. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir one minute. Remove from heat, stir in raisins and spread chocolate glaze evenly over all. Store in refrigerator.

Chocolate Glaze

3 Tablespoons butter
1 oz unsweetened chocolate
1 cup powdered sugar
1 tsp vanilla
1 to 2 T hot water

heat butter and chocolate in saucepan over low heat until melted. Remove from heat; stir in sugar and vanilla. Stir in water, one Tablespoon at a time, until desired consistency.

Great Cold weather Healthy Soup! From the Kitchn


Hot and Sour Mushroom, Cabbage, and Rice Soup

Makes eight to ten 1-cup servings

1 tablespoon canola oil
4 ounces cremini or shiitake mushroom caps, thinly sliced
1 to 3 jalapeno peppers, finely diced
6 cloves garlic, minced
One 3-inch lump ginger, grated (or 1 tablespoon ginger puree)
1 to 3 limes, zested and juiced
8 cups broth — turkey, chicken, or vegetable
1/2 cup jasmine rice
2 tablespoons soy sauce, plus more to serve
1/2 small head green cabbage, cut in half and shaved thin
Chili garlic sauce or kimchi, to serve

Heat the oil in a large heavy pot or Dutch oven over medium-high heat. Add the mushrooms and cook for 5 minutes without stirring. Toss the mushrooms after 5 minutes and cook for an additional 5 minutes, or until well-browned. Add the diced peppers, garlic, and ginger and cook for about five minutes or until fragrant and slightly softened.

Add the lime zest and broth and bring to a simmer. Add the rice, cover, and simmer for about 20 minutes or until the rice is just barely soft. Add the shaved cabbage, lime juice, and soy sauce to taste and simmer for another few minutes or until cabbage is hot.

Serve with extra soy sauce, lime wedges, and kimchi or chili garlic sauce.

Clementine's Fried Chicken Salad

Great Combinations in this Salad- Fried Chicken Strips, Grapes, Strawberries, Baby spinach, clementines, shredded mozzarella and Sugared Nuts.

Sugared Nuts

1/2 C. white sugar
2 T. water
1 1/2 C. toasted pecans (toast in 350 degree oven for 7-10 min.)
In a medium sized frying pan, place the sugar and water. When the sugar has melted
and the mix begins to boil, add the nuts.
Continue to stir the nuts over medium heat, stirring
constantly just until the water boils away and the nuts begin
to look like they are coated with sand.
Quickly remove them from the heat and pout out
onto a greased sheet of tin foil. Separate the nuts
with a fork if desired. Let cool, then chop


Dressing

3/8 C. white wine vinegar
3/8 C. balsamic vinegar
1 tsp. dry mustard
1/2 C. sugar
2 T. chopped onion, red or white
1 T. poppy seed
3/4 tsp. salt
1 1/4 C. light olive oil

Mix everything in the blender besides the oil. With the blender
running, slowly drizzle in the olive oil to emulsify the dressing.


Salad


Mix together an assortment of mixed lettuces, washed, drained and chilled,
halved grapes, chopped green onion (if desired), strawberries, sugared pecans, shredded mozzarella, and clementine wedges and pre-cooked boneless fried chicken strips, cut into bite sized pieces. Toss with dressing and serve right away.

Making peppermint patties

I never got all the treats made before Christmas so We made peppermint Patties the last day of Christmas Break! This Recipe makes a lot!

Ingredients
1 package (8 ounces) cream cheese, softened
1 teaspoon peppermint extract
9 cups confectioners' sugar
3/4 cup milk chocolate chips
3/4 cup semisweet chocolate chips
3 tablespoons shortening
Directions
In a large bowl, beat the cream cheese and extract until smooth. Gradually add confectioners' sugar, beating well.
Shape into 1-in. balls. Place on waxed paper-lined baking sheets. Flatten into patties.Cover and refrigerate for 1 hour or until chilled.
In a microwave, melt chips and shortening; stir until smooth. Cool slightly. Dip patties in melted chocolate, allowing excess to drip off; place on waxed paper until set. Store in the refrigerator. Yield: about 4 dozen.

Sopapilla Cheesecake

This was Great! and Cade Made it. Lots cream cheese, butter, Cinnamon... and super easy!


Sopapilla Cheesecake
adapted from Realmomkitchen

2 cans Pillsbury crescent rolls
3-8oz cream cheese (room temperature)
1 1/2 cups sugar
1 tsp. vanilla extract
1 tsp cinnamon
1 stick butter (1/2 cup real butter not margarine)

Spray a 9 x 13 pan with cooking spray. Unroll and press 1 can crescent rolls into the bottom of your baking dish press the seams together. In a separate bowl blend the cream cheese, 1 cup sugar and 1 tsp vanilla spread over top of dough. Unroll the second can of crescent rolls and place on top of the cream cheese mixture pressing seams together again. Melt butter and pour over top layer of crescents. Mix the reaming 1/2 cup of sugar & cinnamon together. Sprinkle cinnamon sugar mixture generously over the top. Use more if you wish. Bake at 350 degrees for 30 minutes until bubbly and bottom crust is slightly brown.
