My Secret Pumpkin Spice Shake~ Dairy Free and Enhanced with Essential Oils

It's Almost October and once again I am in the mood for everything Pumpkin!

I decided to add a little Pumpkin Spice to my Morning Shake.  This is my morning Shake Recipe- no Dairy and no sugar added.  My Secret Ingredients~   I add Immune Healthy essential oils or in this case a liquid mineral supplement and some Collagen to it!

I have been trying to include Mineral Essence ( a Liquid Mineral Supplement from Young Living) to my diet.  I tried it in water and I did not enjoy the after taste.  It makes me feel great but it was difficult for me to drink it in plain water.   Along with over 60 different minerals,  this supplement has Lemon and Cinnamon Bark essential oils which give it a nice smell.  I thought I would give it a try it in this shake.  Yeah!! It was so much better- the Cinnamon Bark essential oil goes Perfect with the pumpkin!!

If you do not have Mineral Essence a Few Drops of Thieves Essential oil blend is great in this shake.

Pumpkin Spice Smoothy ~ enhanced with essential Oils or Mineral Essence


Blend all ingredients in a Blender~ I love using my Vitamix for Smoothies.
 I added the Mineral Essence or Thieves EO by stirring it into my Serving.

1 Cup Coconut Milk

1/4 Cup Pumpkin Puree

2 Frozen Bananas

1 tsp Vanilla Extract

 1 tsp. Pumpkin Pie Spice  or a blend of your favorite fall spices.
I used 1/2 tsp cinnamon, 1/4 tsp cloves. 1/4 tsp fresh grated nutmeg

1 Scoop of Collagen Peptides by Vital Proteins

1 cup of ice.

Makes about 3 cups

Thieves Room Spray

I have been loving the Thieves Essential oil blend from Young Living!!  Had to make a Room Spray with it so I can spritz it all over the house!  Great scent for fall since it has spicy aroma ~ it has Cloves and Cinnamon essential oils in it.  It is also great for your immune and respiratory system!!




Candles make me sick and I can’t stand the fake smell.   I love the smell of essential oils and they are so much better for your health!   Here is a Healthy, Easy, and inexpensive way to scent your home!  
Three simple ingredients – water, alcohol, and essential oils are needed to make your own essential oil room sprays.  
You can spritz it anywhere  – bathroom, kitchen, laundry room, closets, or your car.   You can make the scent as strong or light as you want by altering the amount of essential oil. I used Thieves essential oil blend in mine this morning.  Some of my Favorites essential oils to use are Grapefruit, Peppermint, lavender, lemon, bergamot, cinnamon, and rosemary. Just use any essential oil you combination you like.  It’s fun to come up with your own special blends.  
An even easier way to quickly make a room spray is to add an essential oil blend.  Young Living has some great ones already perfectly blended to create a wonderful aroma with some heath benefit too.  
Thieves Room Spray
Ingredients
  • 2 tablespoon Vodka
  • 10-12 tablespoons filtered water
  • 20 drops of Thieves essential oil blend
Instructions:
Place the Vodka into a small spray bottle. Add the desired drops of essential oils. Shake well and add the water. Shake again and spritz whenever you want to freshen up your home.
(I used a 4 ounce spritzer bottle that I purchased at whole foods)

Loving Farmer's Market Produce

I love Living Next To a Farmer that Grows Produce for Weekly Farmers Markets.  I just stop in and buy right before he takes his load to the Wednesday and Saturday Market.  Today I picked up Eggplant, Colorful yellow and Red Tomatoes, several kinds of peppers, a Sugar baby watermelon, cucumbers, and a few mini pumpkins and gourds...

Tonight's dinner is a simple layered casserole full of fresh summer produce.


Already to go in the oven




Garden Casserole: Eggplant, Tomato, and Rice Casserole

4 large ripe tomatoes
1/3 cup coconut oil
1 large eggplant, peeled and cubed
1 medium onion, finely chopped
salt, to taste, plus 1/2 tsp
2 cloves garlic, minced
1 Tablespoon Chopped Fresh Basil
1/2 tsp dried oregano
fresh black pepper to taste
3 cups cooked rice- add a little butter to it after it cooks
1 cup mozzarella cheese sliced
Grated Asiago Cheese to cover

Preheat oven to 375

coarsely chop enough tomatoes to make 3 cups.  Thinly Slice the remaining whole tomatoes

Heat Coconut  oil in a large skillet over medium heat and add the eggplant, onion, and salt to taste.
cover and cook for 1 minute more.  Add the chopped tomatoes, basil, oregano, 1/2 tsp salt, and pepper to taste.  Cover and Cook until the mixture is saucy, about 5 minutes.  Remove from heat.

Oil a casserole dish. Spread half of the eggplant mixture on the bottom.  Cover with half of the rice, the remaining eggplant, and the remaining rice.  Lay the tomato slices on the rice.  Sprinkle the top with a little minced garlic and shredded fresh basil if desired.  layer the mozzarella cheese and sprinkle the grated asiago cheese over the top of the casserole.  Bake for 40 minutes, or until heated through.

Makes 6 Servings.
